BEST enchilada recipe


I have been asked by a few different people to write down the recipes I use. I will use this blog to record some of my favorite recipes I have tried. **When I look for recipes, I use the internet or iphone apps. I never try a recipe that is rated under 4 stars. I do try to make only the 5 star recipes, but sometimes I will try a four star. I love using the internet for recipes, because people post comments, and sometimes they have great things to add or take away from a recipe to make it taste better or be healthier for you. Gotta love technology.


Turkey Enchiladas Suizas
From Woman's Day | May 10, 2005



Active Time: 15 minutes
Total Time: 40 minutes

INGREDIENTS

*8 corn tortillas, stacked and wrapped in foil

*11⁄4 cups green salsa (salsa verde)

*1⁄2 cup reduced-fat sour cream

*1⁄4 cup chopped cilantro

*11⁄2 cups (8 oz) diced cooked turkey breast

*6 oz reduced-fat Swiss cheese, shredded (11⁄2 cups)

*1 jar (7 oz) roasted red peppers, sliced
Garnish: diced tomato and sliced scallion



PREPARATION
1. Place tortillas in oven. Heat to 425°F. Have a shallow 2- to 21⁄2-qt baking dish ready.2. Mix salsa, sour cream and cilantro in a medium bowl. Spread 1⁄2 cup over bottom of baking dish. In another bowl, combine turkey, 1 cup cheese and the roasted peppers. Remove tortillas from oven.3. Spoon scant 1⁄2 cup turkey mixture down center of each tortilla. Roll up; place seam side down in baking dish. Pour remaining salsa mixture over top. 4. Cover with foil and bake 15 minutes until bubbly. Uncover; sprinkle with remaining cheese and bake 10 minutes, or until cheese has melted. You can also use leftover cooked turkey or chicken. Suiza is Spanish for Swiss.

Raising our Puppy


Ted and I have been trying to raise our puppy to be obedient. Much to our surprise, this process has been harder than we imagined. Our dog's name is Manny. He is a Puggle (Pug/Beagle). Manny has the tendency to push your buttons! He's so darn cute, that it's almost hard to get mad at him (not going to lie, we do have our moments).

Anyways, this week we have researched more of Ceaser Milon's dog training techiniques. In just a week, Manny is progressing in so many ways! Who knew he'd actually learn that his name wasn't "Manny, No." :)

The tips that helped us were:

1. Exercise, discipline, THEN affection (Top 3 important keys to raising your puppy).

2. When Manny gets overly excited or bites, we place our hand beneath his neck and push him on his side till he calms down. This works SO well!!

3. Always set your puppy up for success! Have a schedule of when he drinks, eats AND goes outside! STICK TO IT!
--Always have something for your puppy to chew on, so that he won't bite you!


4. Potty Training- DO NOT yell at your dog when he/she pees inside. Just clean it, clean it, and clean it again. This way he doesn't have the urge to go to the bathroom there again. Stick with the schedule potty time! In time, he will learn the times when he can and can't go potty.
--We have a bell on our door that we have manny ring before we let him outside. He learned this really quick! Now each time he needs to go potty, he rings it! Works Great!! (Remember to praise, praise, praise him when he does go outside)!



I'm sure I will think of more! Just a few tips for those who have new pups!

Baby Leg Warmers!


These leg warmers are so, so cute!

I'm working on some baby leg warmers, because I think they are adorable! All you have to do is buy a pair of women's knee high or trouser socks... cut out the heal and toe...and sew! They're super easy and super adorable!
